Recipe: Brown Scones

Ingredients:
1 cup self-raising flour
1 cup whole wheat flour
3 TBS pure Irish butter
1/2 cup whole milk
Pinch of sea salt

Directions:
Sift flour into a large bowl and rub in the butter quickly and lightly using your fingertips. Add the salt. Using a butter knife or silicone spatual, stir in the milk a little at a time. Using floured hands, knead gently to a soft dough, adding a single extra tablespoon additional milk if necessary.

Roll the dough out evenly, but gently. Roll to about one finger thickness, working on a floured marble board. Using a biscuit cutter, cut down with a single, swift stroke-- Do not use a twisting motion. Transfer scones to parchment-lined cookie sheet.

Preheat oven to 425°. If available, place a pizza stone on the lowest oven rack. Bake the scones on the highest available rack for 14-15 minutes.
