Recipe: Irish-Style Ham

Ingredients:
One approx. 5-6 lb ham
Sufficient cider to cover ham
1/2 cup dark brown sugar
1 TBS mustard
20 whole cloves

Directions:
Cover the ham completely with cold water and bring to a boil. Discard the water and replace with cider. Bring to a boil then reduce heat to a low simmer. Cook, allowing 20 minutes per pound, about 2 hours.

Remove from heat and allow to stand in the hot liquid for 30 minutes. Remove ham, skin it and score the fat with a sharp knife in a diamond pattern. Stud with whole cloves. Mix sugar and mustard then rub liberally into the surface of the ham.

Bake in a pre-heated oven at 400°F for an additional 10 minutes per pound, about 45 minutes to an hour.
