Recipe: Soda Bread

Ingredients:
4 cups all-purpose flour
1 teaspoon fine grind sea salt
1 teaspoon baking soda
1 teaspoon sugar
2 cups buttermilk

Directions:
Sift the dry ingredients into a large bowl. Aerate the mixture by sifting several handfuls of flour through your hands. Add 1 1/2 cups buttermilk, stir through then add remaining buttermilk and combine gently to make a soft dough.

Working quickly, knead the dough lightly. Note: overworking will result in tough bread. Too little effort will result in a short loaf which doesn't rise properly.

Form a large, round loaf about as thick as your fist. Sit the loaf on a lightly-floured baking sheet and cut a cross in the top with a sharp, floured knife. Put immediately into the pre-heated oven at 450°F.

When done, remove from oven and immediately wrap the loaf in a clean kitchen towel which will help stop the crust from hardening too much.
